Oh my goodness friends! Are you needing something that looks amazing yet it's so easy to put together your kids can tackle it?
Here you go! I have modified this slightly from @tamingofthespoon

Total time 39 mins and its 12 servings..
12 thin pancetta slices
12 generous teaspoons soft fresh goat cheese... blue cheese crumbles are great too!
Fig jam ( bought or homemade)
2 baby arugula leaves
6 small figs sliced
Preheat the oven 400 degrees & place pancetta in a single layer on baking sheet. Bake until crisp ( nicely brown/roughly 12-15mins) Drain pancetta crisps and allow to cool. Top each crisp with your preferred cheese" fig jam, 1 arugula leaf, and fig slices. Sprinkle thyme and serve!
Also great with a drizzle of honey and a nut ( pecan or walnut).
